Warewashing Debate Rages on what is Clean

Warewashing - Should There Be A Standard?

There is a degree of ambiguity when it comes to the term “Clean”.  High temperature warewashing typically refers to the wash water being between 66 c and 74 c followed by a final rinse of at least 71 c. But, apart from some specialist cases, this is largely a matter of self-regulation.

Warewashing standardsThe matter takes a serious turn with recent concerns about the E coli. The Food Standards Agency’s Environmental Health Officers have been telling operators that their machines do not eradicate E Coli 0157. These guidelines have been reversed, but have led to calls for clearer standards Europe wide.

Meiko has confirmed that they have received notice from the German Institute for Standardisation about a new standard (DIN SPEC 10534) requiring that caterers “test” that their commercial dishwashers operate hygienically.

It would be logical for any UK requirement to be in line with the German requirement of 60-65c wash and 80-85c rinse.
